Aren’t Coincidences Wonderful?


Here’s a really fun story to share about the location of our new Arizona Home and Greenhouse. Most people think of Arizona as dessert, but we’re not in the dessert. Actually, we left the dessert of Yucca Valley, California to come here.

We’re on a Plateau in the White Mountains of Arizona at over 6,000 ft. in elevation on a piece of land that is covered with Juniper Trees. Eight miles East of us is the beautiful little town of Show Low, Arizona, which is only a few hundred feet higher, but that few hundred feet make all the difference as Show Low is covered with Ponderosa Pine Trees. Certain species of trees require certain elevations.

Now I want to point you to the Brown Outcroppings in the picture above. Those are the Big Volcanic Boulders that are popping out of the greenery. There are a lot of these Boulders, but buried in the greenery are thousands of Little Volcanic Rocks that cover our land. It would be difficult to cultivate the land without using some heavy duty earth and rock moving machines. Right now we’re not considering venturing beyond our Greenhouse.

But here is why we named this Post “Aren’t Coincidences Wonderful?” Our land is covered with Volcanic Boulders and Rocks because 1,000 years ago, what is now the Sunset Crater in the image below was an erupting Volcano that sent the Volcanic Boulders and Rocks over to our property in a dramatic explosion of Mother Nature’s tendency to vent. Our Property is actually sitting in a Volcanic Field.

What’s Happening Today at Aquaponics USA?


‘There are 3 Seed Trays of Seedlings in the Greenhouse that need daily watering. We don’t need to water our Aquaponics Crops that are in the System because the System takes care of that, but when you’re germinating Seeds you need to water everyday.

Below are 3 Standard Seed Trays that have been growing Seedlings for about 2 weeks. We cut holes in our Humidifying Lids to allow more air flow into the Trays as it’s getting quite hot here in our Arizona Summer.

Below is what I call my Seed Tracker Sheet. As I plant the Seeds into the Seed Plugs, I fill in the Sheet with the Code Letters that tell me which Seeds are located where in the Seed Tray. For example BLC means Butter Lettuce Charles and RR means Romaine Red.

As an aside, here’s a little Cat Diversion. We can always depend on Magic for that.

Oh, and then there’s the Bee. He flew by me on the porch yesterday so now I have a clear glass jar waiting for that to happen again. My plan is to capture him and put him into the Greenhouse. I’ll let you know when that’s been accomplished. Did I just hear a Buzzing Sound?

We’re Also Doing More Blog Posts!


Our Arizona Greenhouse and our STEM Teaching & Food Growing System Orders have had us so busy we didn’t have time to talk about it. But what is the point if we don’t share what we’re doing with our Followers, so besides Videos, we’ll be sharing more Blog and Social Posts, too.

Check back to see what we’re up to now. You’re going to be amazed. The circled words in this announcement are the most important words of all starting with our “Followers”. Without you, we’re up here at 6,000 ft. in the White Mountains of Arizona without a rudder (not exactly connecting my metaphors), but you know what I mean.

After an almost 7 year absence from the Video Scene, we’ve returned. We’ll be making a lot of Teaching Videos about everything from germinating seeds to harvesting plants to preserving food.

We even purchased a GoPro Camera to make the highest quality Videos possible. The first six new Videos have not used the GoPro, but the next one about Trimming Tomato Plants will be using it. Our Production Company is called “Food Independent Productions”, and we are looking forward to making some great Aquaponics Demonstration/Teaching Videos for Teachers and Aquaponics Farmers.

THE BEAST IS A SUCCESS!


The Beast with His Coat

We started The Beast and Posts about The Beast on October 7th, 2020 so we’ve been engaging in this R&D for about five weeks, and we’re proud to report The Beast is a Roaring Success! (Actually, it only Roars when we don’t feed it.)

The Beast is now producing Nitrates at a consistent rate as long as we maintain its feeding schedule. Right now, we’re feeding it Tilapia Fish Food, but we’ll be experimenting with other high nitrogen feed stock in the future. The Beast likes its food as digestible as possible so were using the Fry Powder we sell on our website. We don’t feed our Fish Fry Powder because they are fully grown and need larger pellets. We are feeding them the Fingerling Pellets, which have more protein than the Intermediate Pellets and Grow-out Pellets. All of these different Tilapia Food Pellet sizes are available on our website’s Fish Food Page.

We currently have a 320 gallon Fish Tank in our Greenhouse with about 35 fully grown out Blue Tilapia in it, but they are not producing enough Nitrates to fertilize our 40′ x 15′ Greenhouse, which is growing a lot of Tomatoes and Peppers, but not much else due to this lack of Nutrients. Tomatoes require a lot of Nitrates so they are taking up most of what our Fish are producing while leaving enough for some beautiful Red & Green Peppers to also flourish.

Above you see our Cherry Tomato Plants that are about a year old and still producing like crazy. Keep in mind, we’re 6,000 ft. up in the White Mountains of Arizona and it’s mid November, but these plants just keep producing. We pull the curtain you see in the background which helps us regulate the night temperatures so it doesn’t get too cold.

Keeping these tomato plants trimmed is practically a full-time job as they won’t produce unless you cut back all of the sucker branches that live up to their name “Sucker” as they suck up all the nutrients disallowing the tomatoes to flourish. These plants were trimmed just last week, and will need a four-hour trim job in about one more week. For our next Post, we’ll explain how to do this important job to get a lot of tomatoes like you see here in this close up of the Cherry Tomato Plants.

Below are photos of our Peppers, which are also flourishing along with the Tomatoes. We’re growing both Red and Green Peppers and they’re all Sweet Peppers as we’re not fond of hot ones, which also grow great in an Aquaponics System.

It’s important to also keep this Tomato Plant trimmed back so it will produce this amazing amount of Big Red Tomatoes and still leave enough nutrients for the Green Bell Peppers.

It may look like we’re growing a lot, but this Greenhouse has six 4′ x 8′ Deep Media Grow Beds of which only a third are producing. Plus, we have a Leafy Green Vertical System that you can see in the background of the above picture that is capable of putting out 108 heads of Lettuce or a combination of Basil, Swiss Chard, Bok Choy and Lettuce, and we have a Horizontal Grow Out Area with 98 Starter Slots.

Because we don’t have sufficient Nitrates, our growing capability has been greatly curtailed. And that brings us back to The Beast.

We have an enclosed Room adjacent to this Greenhouse, and it even has another 320 gallon Fish Tank in it, which is empty. We could have fired it up, purchased more Live Fingerling Tilapia from our own website and started another Fish Fertilization program, but we really wanted to know if we could do Aquaponics without the Fish, and it seems we have proven that is possible with The Beast. What we’re ending up with is a combination System that utilizes Live Fish and The Beast to feed Nitrates to our Plants, but we believe you can grow Vegetables without any fish at all if you have The Beast. In that case, the System is no longer an Aquaponics System. It would be a Nitraponics System, and The Beast would be sized or duplicated according to the size of the System.

Above, we talked about the curtains that we enclose our Greenhouse with at night during the Winter months. For the same reason, we wrapped The Beast with Insulation to keep him warm. The Beast calls it his Coat and is a very well fed and Happy Camper right now. We’re still running R&D on The Beast so we’re not ready to give the details of its magical ability to produce Nitrates yet. Suffice it to say, Nitraponics could be the new Aquaponics for growers who aren’t interested in growing Fish.

What does The Beast have to do with the Scientific Method?


The last time we talked about The Beast, he was Hangry because he hadn’t been fed in 7 Days. We weren’t being mean. It was all a part of the Research & Development (R&D) we’re conducting to create Nitrates without using Fish in Aquaponics Systems.

As you can see, The Beast is a little happier today because he’s been getting lots of food lately as this is our Second Round of Experimentation with this Project. Also, as you can see, The Beast has a bit of a Questioning Look on his face indicative of where we are at in this early stage of our Research. We’re wondering how this is going to play out over time and through several iterations.

So let’s talk about what it takes besides a lot of Patience to run an R&D Project of this nature. Our Aquaponics Systems Engineer, Oliver Duffy, is just that, a retired Aerospace Engineer, so he knows how to conduct R&D using the Scientific Method.

What is the Scientific Method?

“The scientific method must satisfy four characteristics:

  • Replicability: Others should be able to independently replicate or repeat a scientific study and obtain similar, if not identical, results.
  • Precision: Theoretical concepts, which are often hard to measure, must be defined with such precision that others can use those definitions to measure those concepts and test that theory.
  • Falsifiability: A theory must be stated in a way that it can be disproven. Theories that cannot be tested or falsified are not scientific theories and any such knowledge is not scientific knowledge. A theory that is specified in imprecise terms or whose concepts are not accurately measurable cannot be tested, and is therefore not scientific.
  • Parsimony: When there are multiple explanations of a phenomenon, scientists must always accept the simplest or logically most economical explanation. This concept is called parsimony or “Occam’s razor.” Parsimony prevents scientists from pursuing overly complex or outlandish theories with endless number of concepts and relationships that may explain a little bit of everything but nothing in particular.” (Quote from https://courses.lumenlearning.com/suny-hccc-research-methods/chapter/chapter-1-science-and-scientific-research)

Oliver’s theory is that he can create an environment within a Vertical Water Tank that we are playfully calling The Beast, which contains certain components, and that after a yet to be specified amount of time of feeding The Beast with nitrogen rich organic content, it will create Nitrates.

He is working with The Beast daily, taking and recording measurements, and as soon as he can declare this R&D to be Replicable (Step 1 of the Scientific Method), we’ll let you know what we’ve discovered and work toward putting The Beast on the market as a Product on our Aquaponics USA website.

The Beast is HANGRY today!


Yesterday, we introduced The Beast. Today he’s not in a very good mood, and we don’t recommend putting your fingers in his food depository. I said I was going to feed him yesterday, but my partner, Oliver, our System Engineer and R&D genius stopped me because not feeding him is the phase we are in right now.

In fact, The Beast hasn’t been feed for 7 Days so no wonder he’s hangry. There’s so much to share about The Beast–his size, shape, food preferences and what’s behind the chemistry that makes him work, but for now we’re keeping these Blog Posts short and sweet. The Beast is producing Nitrates just like we hoped, and we’ll give you numbers and his feeding schedule soon.

In the meantime, we’re tip-toeing around in the Greenhouse so as not to disturb him. More about The Beast tomorrow. Did you hear that? He’s growling again!

Introducing The Beast


Here’s a Logo Image of The Beast. We’re not ready to actually show you The Beast yet, but we can talk about it. The Beast is ALIVE, and, as you can tell from its Logo, it’s a Benevolent Creature. If our R&D on The Beast continues to go the way it seems to be going, The Beast is going to be one of the most innovative inventions to Aquaponics Tech ever.

The Beast has a job. It’s working 24/7 in our Greenhouse. It’s job is to make Nitrates for our Aquaponics System saving us from having to add more Fish. Several weeks ago, we discovered we didn’t have enough Nitrates to grow all the Plants we want to grow in our 15 ft. x 40 ft. Greenhouse. We needed to find a way to add Nitrates without adding more Fish.

The Beast appears to be solving that problem, but we have a way to go with the R&D. Have to go. Working on our relationship with The Beast, and right now it’s time to feed it. The Beast can be a little demanding when it’s feeding time. We’ll keep you posted on how The Beast R&D is going.

Dear Aquaponics,
This new Food Growing System is a real beauty with four 11 sq. ft. Grow Beds all positioned around a 320 gallon Fish Tank. Below is a photo of our own 320 gallon Fish Tank with about 50 Tilapia happily swimming around in it.

Coolers. It snowed here last night and has gotten down to minus 8 degrees Fahrenheit recently so we put doors on the openings where the air from the swamp coolers flows into the Greenhouse during warm weather.
 

At the other end of this Greenhouse, we’ve installed our new stainless steel three tub sink, which is going to be perfect for washing and packaging our vegetables. In California, we had to do this in our kitchen, which was difficult and inconvenient.

The Pascua Yaqui Tribe of Arizona is soon to receive their FGS-44 STEM Food Growing System, which is pictured on our Cover.

“The Pascua Yaqui Tribe is a federally recognized tribe of Yaqui Native Americans in southern Arizona. Descended from the Yaqui people of Mexico, the ancestors of the Pascua Yaqui Tribe first settled in the United States near Nogales and south Tucson in the early 1800s. In the early 20th century, the tribe began to expand into settlements north of Tucson in an area they named Pascua Village, and in Guadalupe, near Tempe. They gained recognition by the United States government on September 18, 1978.
The Tribal government is the largest employer on the reservation. In addition to a smoke shop and artisan shop, the Tribe operates the Casino of the Sun gaming facility, which includes slot machines, bingo, restaurants, games and employs more than 600 staff. Casino Del Sol, the Tribe’s second gaming property, opened October 200 and has provided an additional 550+ jobs on the reservation and in the Tucson Community. The expansion of Casino Del Sol opened November 11, 2011. An additional 700 jobs was provided to the community with the expansion.” (Quote taken from Wikipedia Page entitled Pascua Yaqui Tribe).
Below is the Pascua Yaqui Tribe’s FGS-44 System all palleted up and ready to get on the 18 Wheeler that can barely fit in the driveway where it will pick up this pallet and deliver it to Tucson, AZ.

Say Hello to our new crop of Fish. These guys are young Blue Tilapia that are about four months old and run an average of 6 inches. When we made our move to Arizona, we had to give our Tilapia away to another Aquaponics enthusiast as it would have been too difficult to transport them and we didn’t have our Greenhouse built yet. It’s so great to have Fish again. It won’t be long before we move these guys out of the Greenhouse into their dedicated Fishroom, which is a 30′ x 15′ space adjacent to the Greenhouse where two of these 320 gallon Fish Tanks will be.

Just like our other Tilapia, these guys love their Condos. We’ve placed large PVC Pipes, which we’ve connected together in a Double Layer Construction to serve as resting, mating, hang outs for them.
We’re so happy to be back and want to thank you for following our Newsletters and patiently waiting for us to come back online. We so appreciate your interest in Aquaponics USA. We’ll continue to bring you important information about Aquaponics, our Food and our U.S. Food System, which, right now, is broken and has turned us into subjects of the Big Food Sharks and the Biotechs.

Please forgive us for missing our April Newsletter. We got real wrapped up in the last couple of trips to completely empty our California property and complete its sale.

What I’m realizing is I’m tricking myself into writing a book one month at a time as that’s what I need to do in the near future, combine all of these Newsletters into a book about Obesity.

As we wait to gather up the money to complete our Aquaponics
Greenhouse project, which is built but still empty, I continue to write about health and nutrition, which I never would have gotten into so deeply if it weren’t for Aquaponics. When all is said and done, they are intrinsically linked.

For those of you who are waiting to see our Aquaponics System get installed in our Greenhouse, don’t despair it’s coming soon.

At the end of the day, maybe it is these Newsletters about Health & Nutrition that are the most important especially if even one person is able to save themselves from chronic illness or even worse, death, due to lack of knowledge about these things.

Here’s one more Newsletter about the killer, Diabetes. If it can kill one less person because of the information in this Newsletter, my time has been well spent.

We missed our deadline for an April Newsletter so we’ve combined it with May’s Newsletter. To recap where we’ve been regarding the extensive subject of Diabetes, our January Newsletter was about recognizing the symptoms, understanding what Diabetes actually is, getting familiar with a commonly prescribed drug for Diabetes, Metformin, and introducing the first really scary killer aspect of this disease, Kidney failure!

February was all about our Greenhouse project so we didn’t get to Part B of our Diabetes Series until our March Newsletter.  That one got really scary when we discovered that Diabetes also causes heart disease and blindness. Now we’re going to tell our personal story of how we’re curing Diabetes using Dr. Joel Fuhrman’s books, “The End of Diabetes” and “Eat To Live“.

The cover picture of the symbolic Diabetic who is fading away as he reaches for help is such a perfect depiction of what happens with this debilitating disease. Its victims quite literally fade away and then finally die due to some of the most severe complications of any other disease. Diabetes has been found to be the cause of severe heart disease, kidney disease and blindness. This isn’t a disease to take lightly or mess around with.

Only recently has it been recognized as the Number 3 killer of Americans because it’s been hiding behind and actually the cause of heart and kidney failure. What’s more telling is it often hides even from its victims who have no idea they have Diabetes. They attribute its symptoms to age, lack of sleep, being over weight, stress or some other seemingly more benign disorder. Once it progresses to a level that can no longer be ignored and they go to a doctor who checks their blood glucose levels, they discover they are in a full-blown or sometimes, if they’re lucky, a Pre-Diabetic state. Identifying this disease is the first step to healing it, which is why our Headlines on these 3 Newsletters are: IDENTIFY, DEAL WITH & CONQUER.

This Newsletter is focusing on the “CONQUER” because it can be conquered with proper Nutrition  and here’s where you get the method and the recipes, in Dr. Fuhrman’s books.

Our Personal Story:

Before we get into the Conquering part, let’s talk about the “DEAL WITH IT” part, and here’s where our personal story comes into play because we failed to “DEAL WITH IT” when Oliver was first diagnosed with Pre-Diabetes. We just didn’t take that diagnosis seriously. We’re intelligent people, so we’re feeling like we’re not alone in this weird “Lets Not Think About It” behavior, and we believe there’s a whole lot of diagnosed Pre-Diabetics that could avoid going into full blown Diabetes if they dealt with that early Pre-Diabetic diagnosis. We believe that the lack of information about how terrible this disease really is, is the problem here, and perhaps our Health and Human Services Dept. should wage a Diabetes Awareness campaign to help people understand what they’re dealing with or in many cases not dealing with.

Dealing with it early is the same as dealing with it late in terms of the ameliorative behavior that has to take place, which means nothing less than a complete change of diet. And there it is! We’ve said it! If you want to cure your Diabetes, you HAVE TO CHANGE YOUR DIET DRASTICALLY. That’s where Dr. Fuhrman’s book, “The End of Diabetes” comes in. It explains what’s wrong with our standard American diet and how to modify it so it stops killing us (and everyone else in the world who have adopted our diet) by the thousands.

Before I was told about Dr. Fuhrman’s book and after Oliver had been diagnosed with full-blown Diabetes, we were still not making any drastic dietary changes. We thought we were eating healthy. All of our vegetables were organic. We used Almond Milk in place of regular milk. We were doing our best to be Gluten free. We ate a lot of the veggies we grew in our Aquaponics System. However, to save time in our busy life, we started buying a lot of pre-prepared foods. Yes, they were organic too, like Amy’s Non-Gluten Pizza and her Ravioli Bowls but the very thing that had to be eliminated, carbohydrates, were still in our diet in spades and Oliver’s glucose numbers continued to rise (not that we were measuring them at the time).

Oliver had been prescribed a common Diabetic medication, Metformin. So at a whole level, we were letting the medication take care of everything. But there was a problem. Once he got up to the prescribed dosage, he found the side effects to be intolerable so he quit using it. We went through a few weeks with him not taking Metformin and us not doing anything different with our diet. Then he’d try Metformin again taking less of it. The side effects kicked back in and became intolerable once more so he quit again. We rode this Metformin teeter-totter for several weeks until it became obvious that the most common and best drug for Diabetes wasn’t working for him.

I felt helpless. I didn’t feel that Oliver was taking his Diabetes seriously, and I didn’t know what to do so I wrote a Newsletter, the January Newsletter, about Diabetes. My hope was that when Oliver read it, he would start taking his disease more seriously. What actually happened is I woke myself up. When I arrived at the research about how Diabetes destroys kidneys, I was shocked and got really scared. Now, I was shocked, scared and helpless. Then I remembered a Trainee at the Biocybernaut Institute had told me about a Diabetes book that had the word “End” in the title. When I went back to do another training, I found the sticky where I had written the name of Dr. Fuhrman’s book and I ordered it. A couple more weeks passed before I dedicated a day to read “The End of Diabetes”. It changed everything.

Here are the Three Main things I Learned that rainy Sunday as I read Dr. Fuhrman’s book:

1. Humans are primates! And all primates eat a diet of predominantly natural vegetation [except humans]. How do we know we’re primates? “Besides similar anatomy and behavior, there is DNA evidence. It confirms that humans are primates and that modern humans and chimpanzees diverged from a common ancestor between 8 and 6 million years ago. There is only about a 1.2 percent genetic difference between modern humans and chimpanzees throughout much of their genetic code.” (Quote taken from the Smithsonian Institute Education website article entitled, “What does it mean to be human?)

2. Too much protein causes heart and kidney damage! You have to accept the first premise to understand this second one. If we’re meant to eat natural vegetation and not meat then heavy meat intake will cause problems. Let’s think about this for a minute. Meat eaters like Lions and Dogs have fangs for killing and eating meat. Except at Holloween, we don’t have fangs.

“Diabetics die mostly of heart attacks. A meat-based diet promotes atherosclerosis, increases the risk of blood clots, and accelerates kidney failure in diabetics. A diet high in animal products and low in vegetables and beans is the formula for a medical disaster. Diabetics need the opposite: a diet high in vegetables and beans and low in animal products.”

The American Kidney Fund corroborates this statement by Dr. Fuhrman with a warning to Americans about high protein diets for weight loss and muscle gain in an article entitled  “The AKF Warns About Impact of High-Protein Diets on Kidney Health”.  Also, “The European Prospective Investigation into Cancer and Nutrition” study found that for every 5 percent of calories consumed from animal protein, the risk of Diabetes increased 30%. There’s even more evidence that high protein diets are bad for us. “A landmark study published in 2000 actually measured what was happening to the arteries of people on low-carb, high-protein diets. Utilizing SPECT scans to directly measure blood flow within coronary arteries, the development of heart disease was examined in 16 people on a vegetarian diet that was high in fruits and vegetables and in 10 people on a low-carb, high-animal-protein diet. The results were shocking. Those sticking to the whole foods vegetarian diet showed a reversal in expected heart disease. Their partially clogged arteries literally got cleaned out, and blood flow to their heart through their coronary arteries increased by 40%. Those on the high-protein diet exhibited rapid advancement of their heart disease with a 40% decrease in blood flow in the heart’s blood vessels. Thus, the only study on the  high-protein diet to actually measure arterial blood flow showed that this style of eating is exceedingly dangerous.”

To save a Diabetic, we need to re-educate ourselves and step out of the American Meat and Dairy Associations’ hype that lots of milk and meat are good for us. We simply are not calves, which cow milk is meant for, and we are not lions, which need meat. We are primates and all of our fellow primates do NOT eat meat! The studies quoted above are telling us what we need to do. If you have Diabetes or know someone who does, you can’t afford to ignore these studies.

3. All of the Amino Acids originate from plants! “For many years, most Americans incorrectly believed [and many still do] that only animal products contained all the essential amino acids and that plant proteins were incomplete. False. They were taught [and still are being taught] that animal protein is superior to plant protein. False. They accept the outdated notion that plant protein must be mixed and matched in some complicated way that takes the planning of a nuclear physicist for a vegetarian diet to be adequate. False. I guess they never thought too hard about how a rhinoceros, hipppotamus, gorilla, giraffe or elephant could become so big while eating only vegetables. Animals do not make amino acids from air; all the amino acids originate in plants. So the lion’s muscles can only be composed of the protein precursors and amino acids that the zebra and he gazelle ate. Green grasses (or leafy greens) made the lion and are the mother of all the protein that built all the creatures on planet Earth.” (All of the Quotes in this section are from Dr. Furhman’s book, “The End of Diabetes)

Dr. Furhman’s book was a real eye-opener. Now, as I write this Newsletter, I realize that Diabetics are actually reluctant proselytizers who are signaling what’s wrong with the American Diet. Their bodies have gone into a diabetic state that has been caused by insulin resistance, and too much animal protein, sugar and unhealthy carbs exacerbate that insulin resistance. The American diet is wrought with those three things that turn Diabetics into heart and kidney patients who are sacrificing their lives to be the canary in the coal mine telling us that something dire is wrong with our eating habits. But they can all be saved and, in turn, they can save us all.

This is where we get into the CONQUERING part of the phrase, IDENTIFY, DEAL WITH & CONQUER. I not only had “The End of Diabetes”, I also had ordered Dr. Fuhrman’s “Eat To Live Cookbook” so I had a resource to help me step into this whole new world of Nutritional health that Dr. Fuhrman calls being a “Nutritarian”.  Nutritarians eat for the nutritional quality of every calorie rather than for tastes, customs, habits or addictions. It’s a whole new eating philosophy. Let’s see how Diabetics who become Nutritarians are CONQUERING their disease.

I Had HOPE Again!

I gave Oliver a crash course on Dr. Fuhrman’s “The End of Diabetes” book and explained what it meant to be a Nutritarian. I also vowed to not only support him but to do the program right along with him, and together we decided to go for it. I created a shopping list and off we went to the grocery story where we loaded up on vegetables, nuts and beans. According to Dr. Fuhrman, it’s a “Greens and Beans” diet. This new direction meant the end of breakfast and dinner out, which we were doing a lot of during the last year while making our big move from California to Arizona. It also meant I was going to be cooking a lot more and doing it all from scratch.

Our instructions had us starting at the Strictest Level of Nutritarianism until we got his glucose numbers down. Two months later, and we’re still at the strictest level, and his numbers are way down. We’ll be able to move to the less strict Level when he registers 100 or less every morning. So far he’s done that 3 times but it isn’t consistent enough to move to the next level.

The first time we recorded Oliver’s morning glucose level was a year and a half ago. It was a frightening 367. I wrote about it in a Newsletter and created this not so funny cartoon image to mark the occasion. Normal morning glucose should be no more than 100. His improvement is fantastic; but it’s only working because we’re staying on the Strict Level of the diet religiously.

On January 1st of this year, 2017, Oliver did a random recording of his morning blood glucose level. It was 269. After being a Nutritarian for the month of April, Oliver’s May morning glucose numbers that he’s recording daily in the log that comes with his ReliOn Glucose measuring device are showing from May 1 to present day (May 16th) as follows: 110, 104, 110, 110, 108, 98, 107, 94, 109, 104, 106, 105, 107, 100, 108, 101. The program is working! His numbers were 100 and below three times in the last 16 days. Now all we need to do is get his numbers under 100 consistently, and we can move to the less strict level of the diet.

So What Do Nutritarians Eat When They’re Lowering Glucose Levels!

You’re looking at it, Vegetable Soup! We add Black Beans as we dish up the Soup. This is dinner almost everyday. The soup is cooked from scratch using either fresh juiced celery or carrots as a base along with a low sodium vegetable broth. Then I pile in the veggies like carrotts, mushrooms, onions, celery, zucchini, broccoli, tomatoes and season to taste without salt. The most amazing part of having eaten Soup for two months straight is we’re still enjoying dinner and not really craving the forbidden food like bread, white rice, pizza and meat. I’ve learned to cook up a bigger pot than this to start so it lasts about 3 days. I cook the veggies el dente so they don’t get mushy. We keep the pot of soup in the refrigerator and warm what we’re going to eat in the microwave (of course a small stove-top pan will also work). That way the veggies stay el dente.

Along with the soup, we have a salad or steamed vegetable like broccoli. Oil is on the forbidden list so we’ve discovered white balsamic vinegar (Blanco) that is Pear Infused. It’s delicious. We can choose between that and home made oil-less salad dressings from the “Eat To Live” Cookbook. Sometimes I add apples and nuts to the salad. Or we eat the apple and nuts as desert.

The added benefit of lowering glucose numbers is also lowering numbers on the body weight scale. Oliver has lost 15 lbs. and I’ve lost 10. So that’s our main dinner. As a dinner variation, we’ve discovered Spaghetti Squash, which is a very interesting vegetable and named for its stringy spaghetti-like interior. The first time I roasted spaghetti squash, I thought what you see in this picture of the actual squash was all the spaghetti I was going to get. I didn’t realize that when you take a fork and dig into the thick sides, it’s all this stringy spaghetti-like food.

Top it off with steamed veggies and your favorite marinara sauce and you’ve got something that resembles actual spaghetti.

Breakfast is easy because we’re just making protein shakes using plant protein instead of whey protein. Oliver likes vanilla and I like chocolate so we buy both flavors and mix the protein with Almond milk in those flavors too. Notice the Almond milk is “Unsweetened” and the plant protein is organic.


Lunch is another vegetable dish. This time it’s roasted veggies. We use our counter top Breville, which is a handy little cooker that is really versatile. I put Low Sodium Vegetable Broth into the bottom of a backing dish and pile in eggplant, tomatoes, zucchini, onions, asparagus, leeks and red and yellow bell peppers and season to taste.

We’re realizing we need to feed Oliver more often than three times a day. So we’re planning to add  some raw vegetables along with steamed vegetable dishes in between meals.

What’s for desert? We’ve turned nuts into add-ons as well as between meal treats. Nuts are an important component of this diet because they deliver the healthy fat that the body and brain need to function properly. You can tell by the size of the bags which are our favorite nuts, Pecans. Not pictured are almonds and walnuts, which we had run out of when this picture was taken. We’ve just added Brazil nuts to the mix. These nuts are raw and unsalted.
We pop them into our Breville for a few minutes to roast them a little, which enhances their flavor.
Then we eat them warm or break them up and put them on our salads. Berries are some of the less sweet fruits so blue and black berries make good deserts. We discovered Kiwis and were on a Kiwi kick for a while. We combined Kiwis with Blueberries or Blackberries for an after dinner treat.
This is a Celery Boat with Kiwi and Blueberries going for a ride. Someone with more of an imagination and cooking skills could come up with a bigger variety of dishes on the Strict Level, but for now this is working great to do the job of lowering Oliver’s glucose numbers. Once we get him consistently at 100 or below, we’ll be able to add other foods.

I can’t express how relieved we both are that this Nutritarian program is working to lower Oliver’s glucose levels and keep him out of those severe sugar swings he was experiencing. We truly feel he’s out of the Diabetic woods. He’ll be going to the doctor in the next couple of days, and we’ll get the official report when his doctor’s Nurse Practitioner looks at his A1C Count.

“The A1C test is a blood test that provides information about a person’s average levels of blood glucose, also called blood sugar, over the past 3 months. The A1C test is sometimes called the hemoglobin A1c, HbA1c, or glycohemoglobin test. This test is the primary test used for diabetes management and diabetes research. It is based on the attachment of glucose to hemoglobin, the protein in red blood cells that carries oxygen. In the body, red blood cells are constantly forming and dying, but typically they live for about 3 months. Thus, the A1C test reflects the average of a person’s blood glucose levels over the past 3 months. The A1C test result is reported as a percentage. The higher the percentage, the higher a person’s blood glucose levels have been. A normal A1C level is below 5.7 percent. In 2009, an international expert committee recommended the A1C test as one of the tests available to help diagnose type 2 diabetes and pre-diabetes.  Previously, only the traditional blood glucose tests were used to diagnose diabetes and the following table provides the percentages that indicate diagnoses of normal, diabetes, and pre-diabetes according to A1C levels. The National Glycohemoglobin Standardizaiton Program (NGSP) developed standards for the A1C tests so it’s reliable in all testing arenas.” (Quote taken from the NIH (National Institute of Diabetes and Digestive and Kidney Disease website article entitled ” The A1C Test & Diabetes“)

The following table provides the percentages that indicate diagnoses of normal, diabetes, and pre-diabetes according to A1C levels.


Those with pre-diabetes are likely to develop type 2 diabetes within 10 years, but they can take steps to prevent or delay diabetes by following a Nutritarian lifestyle.

We’re the Guinea Pigs here and we’re testifying to the fact that following the Nutritarian diet is way more rewarding than what we were doing, which was nothing and then relying on a drug, which didn’t work. We’ve taken our health into our own hands, taken responsibility for it and changed the game completely. This isn’t a short-term diet. This is a lifestyle change and from our perspective it’s so worth it because we’re no longer rolling the dice hoping Oliver won’t be one of the few Diabetics who doesn’t get heart disease or kidney disease or go blind. We’re insuring a long life ahead for both of us and we’re Saving A Diabetic!

A Day of Celebration! We have Proof!

It’s Thursday, May 18, 2017, and it’s a day to celebrate! Oliver just got the results of his blood work from his Nurse Practitioner, Mr. Dan Roper, in Show Low, Arizona. Blood work doesn’t lie. According to Mr. Roper, Oliver’s A1C Count is 6.3. He’s gone from full-blown, Type 2 Diabetes with an A1C Count of 11 down to 6.3 in two months!

His Triglycerides, a component of Cholesterol, went from 1,023 to 111. That’s right, it was a 912 point DROP! “The American Heart Association recommends an optimal triglyceride level of 100 mg/dL. In the human body, high levels of triglycerides in the bloodstream have been linked to atherosclerosis and, by extension, the risk of heart disease and stroke.” Oliver has been taking Red Rice Yeast, an over the counter supplement recommended by Mr. Roper to help lower his Triglycerides, which were in the danger zone. No more! And according to our chart, there’s No More Diabetes. He is Pre-Diabetic. Now, we’re striving for a count below 5.7, and we have absolute certainty we can get there. No one has to live and die with Diabetes! Dr. Fuhrman is right! This is a curable disease for every Diabetic who is willing to become a Nutritarian! This is so huge and amazing, I ‘m crying.
